How to make
Cut the beetroot into thin slices and place it in a large bowl.
Add the leafy greens and thinly sliced garlic.
If it is very old, it is better to split it and remove the sprout from the middle, so that the flavor is not too strong.
Grate the parsnip and white turnip on a coarse grater.
Prepare a dressing of olive oil, lemon juice and black pepper. Do not add salt, if the white cheese is very salty.
Mix all the ingredients for the vitamin salad with the dressing and if you like, add more olive oil or lemon juice.
Place the vitamin salad in a serving bowl and crumble white cheese on top.
