Ingredients

  • eggs - 2 pcs. hard boiled
  • avocado - 1 pc. large
  • baby lettuce - 1 pc.
  • dried tomatoes - 5 halves + for decoration (marinated in olive oil)
  • jalapeno - 1/2 marinated pepper
  • lemons - 1/2 pcs.
  • mayonnaise - 1 tbsp. with a tip
  • olive oil - 2 - 3 tbsp.
  • oregano - 1 pinch
  • salt - by taste

How to make

Eggs with avocado and dried tomatoes - an amazingly good combination. The crunchy baby lettuce adds incredible freshness to this great salad. Here's how to prepare it:

Cut the avocado in half, remove the stone, cut the inside of it into small cubes and scoop it out with a spoon.

Put the fruit in a bowl and immediately drizzle it with freshly squeezed lemon juice.

Peel and dice the eggs. Wash and thinly and crosswise slice the tomatoes and marinated jalapeno, and lettuce, by removing the outer leaves.

Season with olive oil, salt, oregano and more lemon juice.

Mix well and serve the delicious avocado salad garnished with more dried tomatoes and a little mayonnaise.

* The mayonnaise can also be with a garlic flavor. It's barely noticeable, it just adds a slight creaminess and binds the ingredients in the egg salad.
