How to make
All products should be at room temperature.
Beat the eggs with the sugar, then add the oil, peel and lemon juice.
Add the pumpkin puree and mix with a mixer.
Sift the flour and add the rest of the dry ingredients. A thick mixture should be obtained.
Turn on the oven to heat up to 360°F (180°C) with a fan.
If you don't have paper muffin molds, just grease the muffin tin well and sprinkle it lightly with flour.
Add 1 spoonful of the mixture. If desired, sprinkle the muffins with crushed walnuts.
Bake for 30-35 minutes, or until they're fully baked.
The pumpkin and oat muffins are ready.
