"Oat cookies with pumpkin - the perfect snack wherever you are."

Ingredients

  • oat flour - 3.2 oz (90 g)
  • fine oats - 3.2 oz (90 g)
  • spelt flour - 2 tbsp.
  • pumpkin - 5.6 oz (160 g) grated
  • eggs - 2 size L
  • coconut shavings - 2 tbsp.
  • nuts - 1.8 oz (50 g) crushed hazelnuts or almonds
  • coconut oil - 1.4 oz (40 g)
  • honey - 2.8 oz (80 g)
  • brown sugar - 0.7 oz (20 g)
  • salt - 1 pinch
  • cinnamon - 1 tsp.
  • baking powder - 1 tbsp (10 g)

How to make

Beat the eggs with the brown sugar and a pinch of salt. They should just become liquid, so do not beat into a fluffy consistency.

Gradually add the honey, coconut oil and shavings, as well as the grated pumpkin.

Finally, add the oat flour, oats, crushed or finely chopped hazelnuts, spelt flour, cinnamon and baking powder. Mix until you get a homogeneous mixture.

Don't expect it to be very thick like cookie dough. Leave it for 10 minutes, during which time turn on the oven to heat up to 340°F (170°C). The mixture will thicken slightly. If it still seems too thin to you, you can add more coconut shavings or crushed nuts. A lot depends on the pumpkin itself, how much water it has and how much it will moisten the dry ingredients.

Scoop out the mixture and place it on a baking tray lined with parchment paper. Shape with a spoon to make round pumpkin cookies (they don't have to be perfectly smooth).

Bake the oat cookies for 15-20 minutes or until they become lightly golden brown.

Let the finished oat cookies with pumpkin cool slightly in the tray, then transfer them onto a wire rack to cool completely.
