How to make
Mix all of the dry ingredients in a bowl.
Using a mixer, in another bowl, beat the butter at room temperature along with the sugar.
Add the boiled pumpkin and stir briefly. Turn off the mixer and add all of the dry ingredients. Stir with a wooden spoon.
With the finished mixture, you have two options:
1. Fill a piping bag with a tip of your choice and pipe out circles.
2. Using two spoons, pour some of the mixture and flatten the cookies slightly on top.
Place them on a tray lined with baking paper.
Bake the pumpkin cookies in a preheated oven at 320°F (160°C), until they're done.
