Ingredients

  • dry yeast - 0.25 oz (7 g)
  • salt - 1/4 tsp.
  • sugar - 1 tsp
  • warm water - 4/5 cup (180 ml)
  • flour - 10.5 oz (300 g) type 500
  • olive oil - 2.5 tsp
  • stuffing
  • ham - 9 oz (250 g) strips
  • field mushrooms - 7 oz (200 g) canned
  • cheddar - 3.5 oz (100 g) grated
  • lettuce - 4 - 5 leaves (Rocket lettuce), finely chopped
  • eggs - 1 pc. slightly beaten
  • sea salt - 2 tsp. coarse

How to make

Mix the yeast, sugar, salt and water, mix with a fork and cover the bowl. Leave the yeast to activate for about 10 minutes. In a separate bowl, sift the flour and add olive oil and yeast to it.

Knead a soft and elastic dough. Shape it into a ball and place it in a greased bowl. Cover it and leave it in a warm place to double in size.

Heat the oven to 430°F (220°C). Grease a baking tray with a little olive oil and knead the dough again. Divide it into 4 parts, each of which is rolled out.

Add to one half with some of the ham, lettuce, cheese and mushrooms, but leave 2 cm from the end uncovered. Spread the edge of the pizza with a little water and cover it with the other half.

Pinch the edges well, arrange the prepared Calcone pizzas in the tray and spread them with beaten egg, sprinkle them with black pepper and coarse salt. Bake, until they aquire a golden color.
