  • wild rabbit - 1 pc. (up to 2 kg)
  • red wine - 8 cups (2 L)
  • carrots - 1 pc.
  • bay leaves - 3 pcs.
  • celery - 1 stalk
  • onion - 1 onion
  • rosemary - 1 stalk
  • fresh sage - by taste
  • cloves - by taste
  • extra virgin olive oil - by taste

How to make

The wild rabbit is an absolutely wild animal, that is hunted and belongs to the gastronomic category of game, which also includes wild boar, deer and roe deer.

Rabbit meat is recommended to be marinated with wine, spices and aromatic herbs to balance its flavor.

Cut the rabbit into pieces and arrange it in a large bowl with the red wine, onion, celery and carrot (cut it into large pieces), bay leaves, fresh sage, fresh rosemary and three or four cloves.

Seal it with foil and refrigerate it overnight.

Remove the meat from the marinating liquid. In a deep pot, pour a few tablespoons of olive oil and cook the vegetables used in the marinade over medium heat.

After a few minutes, add the meat, saute well and pour the wine from the marinade.

Cook the Italian-Style Stewed Wild Rabbit over low heat, until the meat becomes tender. The rabbit is usually ready in about two and a half hours, season it with salt and black pepper and serve it.
