How to make
If the milk is cold, warm it to body temperature. Take a glass with 50 ml of water and add the citric acid and drops of yeast.
Stir well to dissolve and pour it into the pot of milk. Mix again, wrap it and leave it for 1 hour.
Then you can check with a knife - if you're able to cut it, it means it's ready.
Strain it through a cheesecloth and leave it to drain for 2 hours. Then put one tray, then another smaller one and on the small tray put a rectangular plastic box with holes.
Put the cottage cheese along with the cheesecloth in the rectangular bowl and press it down with rectangular styrofoam or boards and then something heavy on top of them.
It is left like this for one night. The next day, you can cut the homemade feta cheese into larger pieces and put it in a tray in which you prepared the brine.
