  • confectionery cream - 7 fl oz (200 ml) without sugar

How to make

Open the cream and pour it into the mixer bowl. Turn it on at high speed and beat, without stopping. Wait for it to be beaten well, then lump up.

You'll know it's done when you notice the water separating from the cream. Stop the mixer.

Here you have two options:

1. Pass the mixture through a strainer;

2. Pour it into cheesecloth and drain;

The liquid is buttermilk, so don't throw it away! You can make mekitsi, bread...etc.

Remove the butter from the strainer or cheesecloth, wrap it in cling film, form a roll and leave it in the refrigerator to harden.

The cow butter from confectionery cream is ready.
