How to make
Knead a soft tart dough from the listed products and the butter and eggs should be at room temperature. You should not knead the dough too long, so that it does not become tough. Leave the dough to cool in the refrigerator for about 30-40 minutes.
During this time prepare the cream. To do this, beat the eggs with the sugar, add the vanilla, starch and a little milk. Put the remaining milk in a saucepan on the stove, until it warms up. Add the egg mixture in a thin stream and stir, until a homogeneous mixture is obtained. By stirring constantly, wait until the cream thickens. Remove it from the heat and cover it tightly with cling film.
When the cream cools, assemble the fruit tart. Roll out 2/3 of the dough and place it in a greased pie mold. Press it tightly onto the walls and make holes in the base, so that it does not rise when baking.
Pour the jam on top and spread the cream on it.
Cover it with a thin crust of the remaining dough and press the edges. From the leftovers you can create some decoration or leave it like that.
Before you put it in the oven, make holes on the upper crust with a fork to get some of the moisture out when baking. Bake at 360°F (180°C) for about 35 minutes.
Once the fruit cake has cooled, sprinkle it with powdered sugar and serve it.
You can also serve the fruit tart with confectionery cream and cherries slightly warm with a scoop of ice cream.
