How to make

This garlic soup is one of the traditional and most famous Spanish soups. It was prepared during the poor years, when there was a shortage of products, but instead every home had the basics - olive oil, garlic, jamon, eggs and stale bread.

Apart from being delicious, the Madrid-style garlic soup with jamon is also very healthy and fights all kinds of flu and colds.

Here's how to cook it quickly and easily:

Peel and chop the garlic cloves. Cut the jamon into small pieces as well.

Heat the olive oil and add the garlic first to release its aroma. Then add the jamon to fry as well (the heat should not be very high).

Pour one heaping spoonful of good quality paprika at a time and stir briefly.

Pour the broth and boil it covered with a lid for 20 minutes.

According to the original recipe, the soup is boiled along with the bread crumbled in it, if you want to make it that way. However, I prefer the bread separately or, as a last resort, added to the broth, but only at the end when serving.

Crack the two eggs directly in and mix, so that they lumps are obtained. If you want you can add more eggs.

Taste how it is on salt. Since the jamon releases a lot when frying, in most cases no more salt is needed.

Serve the aromatic and nutritious soup while it is hot.
