How to make
Peel and boil the potatoes. In another pot boil the eggs. As soon as the potatoes are cooked, cut them into small cubes.
Cool the boiled eggs and also cut them into small cubes. Add them to the potatoes, then add the cucumbers (also cut into cubes), parsley and black pepper.
In a jar, crack the egg and put part of the oil and blend with a liquidizer. As soon as it starts to thicken, add the other part. As soon as the mayonnaise thickens, add the lemon juice. Put the mayonnaise in the salad, add the salt and mix well.
In another plate, scoop out the salad with a tablespoon and shape it into balls. Put the finished potato salad in the refrigerator for 20-30 minutes before consumption.
