How to make
Clean and peel the potatoes, place them in a pot with cold salted water, and boil them for 20 minutes, or until they are ready.
Strain them, run some cold water over them, strain again and dice the potatoes. Slice the gherkins finely, cut the peppers into stripes, and mix them all together in a big bowl.
In a deep narrow container, pour the oil, add salt to taste and the mustard.
Wash the eggshell and crack the egg into the container. Initially the egg should be within reach of the knifes of the hand blender.
Turn on the hand blender to high speed and blend for a few seconds, then slowly start pulling the blender up, to achieve a homogeneous mix.
Add the lemon juice and blend again. Please remember, the lemon juice should be added in the end.
Now you have a creamy, thick mayonaise. Add it to the potatoes and mix gently.
