How to make
In a bowl, mix the strained sweet corn, eggs and salt. Mixing well.
Add the flour, finely chopped garlic and parsley and mix.
Pour everything into a pan heated with fat and cook under a lid on a moderately high heat.
Remove the lid, spread the easy omelette with ketchup (or tomato puree) and sprinkle with grated yellow cheese (or mozzarella) and put the lid back on.
After the yellow cheese has melted, remove it from the pan and serve the quick pan-fried breakfast with eggs and corn on a plate.
