How to make

Poach the two eggs in water with a little salt and vinegar. Take them out and leave them to cool.

Peel and cut the cucumber into thin circles and the red onion into thin crescents.

Season with salt, vinegar and olive oil.

Cut the marinated herring into pieces (preferably larger) and chop the red pepper into small cubes.

Put the seasoned cucumber and onion in two individual plates or one plate and arrange the fish on top.

Place a poached egg in the center and sprinkle with very little salt and finely ground black pepper.

Sprinkle the appetizing herring with the small cubes of sweet pepper and more olive oil.

Serve the fish salad with vodka, brandy or white wine.

Enjoy this herring, cucumber and poached egg salad!
