"If you want to cook a vegan beans, you can skip the bacon part, but it adds a very pleasant smoky taste to the dish."

Ingredients

  • pinto beans - 1.1 lb (500 g)
  • smoked bacon - 4 pcs.
  • green peppers - 1 pc.
  • carrots - 2 pcs.
  • springs onions - 2 stalks
  • oil
  • flour - 2 tbsp.
  • porcini mushroom powder - 1 tbsp.
  • paprika - 1 tsp.
  • spearmint
  • lovage
  • salt
  • black pepper
  • parsley - for sprinkling

How to make

Soak the beans overnight in water.

Wash them and put them in clean water to boil once. Discard this water and wash them again.

Boil them, until they're fully cooked. I personally use a slow cooking device where the beans are boiling on high heat for 5-6 hours.

Fry the chopped spring onions, carrots and pepper. Add the sliced bacon and fry it as well.

Add the paprika, flour and dried mushroom powder, which we also fry, so that they are absorbed by the fat and dilute with cold water (about 2 cups).

Add salt, black pepper, spearmint and lovage (fresh/frozen or dry).

Stir well and leave it on the stove, until it boils.

Add the resulting mixture to the already boiled beans and pour everything into a deep baking pan.

Bake the beans in the oven for about 35-40 minutes.

Serve the dish with chopped parsley.

If you want to cook vegan beans, you can skip the bacon part, but it adds a very pleasant smoky taste to the dish.
