  • flour - 1 cup
  • baking powder - 1 tbsp (10 g)

  • baking soda - 1 pinch
  • dark chocolate - 6 blocks
  • For the jam
  • frozen apricots - 10.5 oz (300 g)
  • sugar - 2 tbsp.
  • lemon peel - 1 lemon and its juice
  • butter - 0.2 oz (5 g)

How to make

Make the pancakes mixture and leave it for about 10 minutes.

During this time, put the apricots and sugar in the saucepan and leave them, until they release their water.

Then wait for the water to almost evaporate, for the apricots to completely soften and begin to fall apart, then add the lemon peel and juice and leave it to thicken over low heat.

Meanwhile, finely chop the chocolate and start making the American pancakes.

On moderate heat, put 1 tbsp. of mixture, a little of the chocolate on top and cover it with a little more mixture to make it like a filling.

Turn it carefully. Just when the apricot jam has thickened, add a small piece of cold butter and stir, until a homogeneous mixture is obtained.
