Ingredients

  • milk - 1 2/3 cups (400 ml) (3%)
  • flour - 1 cup (250 g)
  • eggs - 3
  • blueberries - 2/5 cup (100 g) dried
  • baking powder - 1 tsp full
  • brown sugar - 4 tablespoons
  • vanilla - 1 pod or 2 powder packets
  • salt - 1 pinch
  • oil - 2 tablespoons
  • butter - for smearing the pancakes

How to cook

Soak the dried fruits in water overnight. The next morning, drain them completely and leave to dry.

Pour the milk and scrape the vanilla pod into a bowl. Mix with the sugar and flour sifted with the baking powder.

The result is a dense mixture. To it, add the eggs one at a time, stirring after each. Finally, add the salt, oil and the blueberries, mixed with 2 pinches of flour ahead of time.

Preheat a Teflon pan and lightly grease it. Pour 1 small ladle of the mixture and fry relatively small pancakes on both sides.

Arrange the American pancakes with blueberries on top of each other, and smear each with butter if desired.
