How to make
In a bowl, beat the eggs. Add the milk to them and the melted and cooled butter. Stir well.
In another bowl, sift both types of flour (carob and coconut) and baking powder. Also add stevia.
Start adding the dry ingredients to the liquid, by mixing with a spoon at first. Then knead a soft and non-sticky dough with your hands.
Leave whole grain cookie dough aside for 10 minutes.
Line a tray with baking paper.
Tear off pieces of the dough and form balls, which you flatten between your palms to form a round cookie.
You can make patterns with a stamp as well as with a fork. You can also leave your carob cookies as they are.
From this amount I made 20 healthy cookies.
Preheat the oven to 340°F (170°C) and bake the carob and coconut flour cookies for 13 to 15 minutes.
Then serve the whole grain cookies with carob and coconut flour with a cup of tea or coffee.
