Ingredients

  • tomatoes - 0.9 lb (450 g) well ripened
  • onion - 1 onion
  • garlic - 4 cloves
  • celery - 1 root
  • quinoa - about 3.5 oz (100 g)
  • vegetable broth - 4 cups (1 L)
  • salt - by taste
  • black pepper - by taste
  • olive oil - 4 - 5 tbsp.
  • parsley - 2 - 3 tbsp. (chopped)

How to make

The tomatoes are peeled and cut into pieces. Finely chop the onion and garlic and grate the celery.

Heat the olive oil in a pot and fry the onion and garlic in it, add the celery and then the tomatoes. Add salt and stir everything for 8-10 minutes over moderate heat.

Pour the broth and leave it boil for 15 minutes under the lid, then blend the soup, until it becomes perfectly smooth.

At this point, more broth or water can be added to achieve the desired thickness.

The quinoa is washed and added to everything else, it is boiled for another 10 minutes, or until the grains are swell up and it is done.

The tomato soup is seasoned with more, salt and black pepper, if you like.

The Tomato and Quinoa Soup is served hot and sprinkled with freshly chopped parsley just before serving it.
