How to make
Heat the water with the butter, lard, sugar, salt and baking powder. As soon as it boils, pour the flour all at once and stir intensively, until the steamed dough starts to separate from the sides of the pot.
Remove it from the heat and wait 10 minutes for it to cool down. Then add the eggs one by one, while constantly beating with a mixer or a wire whisk. Do not add the next egg, until one egg is well absorbed.
Heat the oil over medium heat and using a piping bag or two spoons, drop a small amount of the mixture into the heated fat. Fry, until the donuts have puffed up and have aquire a golden brown color on both sides. If they burn quickly, lower the heat a bit, so they don't remain raw on the inside.
Remove and place them onto kitchen paper to absorb excess fat.
Serve them with feta cheese, jam or powdered sugar.
*Since the donuts remain hollow inside, they can be filled with custard, cream, chocolate, or whatever you like!
