You thought you could only make bread with homemade sourdough? Well, here's an idea for something else - wonderful donuts with sourdough. Soft, with a thin crispy crust and an incredible taste.
Yes, it takes more time, but if you plan things well, you won't find it annoying at all.
When you want to prepare this delicious breakfast, start the day before, by feeding your sourdough. It is important that it is freshly fed before you do anything with it.
Pour the flour and water into a bowl and mix into a mixture, which is neither too thick nor too thin. Leave it like that for an hour.
Add the sourdough and sugar, mix well again and leave the bowl covered with cling film. I usually prepare the mixture in the evening and just before I go to bed I check to see if it has already formed bubbles here and there. Then I add the salt and a little more flour to get a thick mixture, by no means a hard dough.
Refrigerate overnight and take it out early the next morning and leave it at room temperature, preferably warmer temperature, until you see a lot of bubbles on the surface and the mixture has doubled in volume.
Heat the oil over medium to high heat and fry the donuts by scooping and dropping the dough with a spoon into the fat.
Fry until golden brown on both sides and serve warm, sprinkled with powdered sugar or your favorite jam.
The sourdough donuts are ready.
