Ingredients

  • flour - 9 oz (250 g) manitoba
  • yeast - 3.5 oz (100 g) Lievito Madre
  • milk - 2/5 cup (100 ml)
  • sugar - 2.3 oz (65 g)
  • egg yolks - 2 pcs.
  • butter - 2.1 oz (60 g)
  • salt - 2 g
  • vanilla powder - 2 pcs.

How to make

In the bowl of a mixer, pour the slightly warmed milk, add the two egg yolks and the slightly warmed butter. Run the mixer for 1-2 minutes to homogenize the liquid and add the sourdough.

Turn the mixer back on to the first setting and let it run, until the mixture becomes creamy. Sift the flour with the two vanillas and 2 grams of salt. Add it into the bowl in portions, until you a smooth dough is obtained. Mix with the mixer for about 10 minutes.

Cover the bowl with a piece of cling film and leave it for 2 hours. Pour the dough onto a floured surface and roll it out carefully into a circle. Cut it into triangles.

You can add a filling according to your taste. Roll up each triangle into a roll. Arrange the rolls on a large baking tray lined with baking paper. After 20 minutes, spread them with melted butter.

Cover the tray with a piece of baking paper and place it in the oven with the light on for 12-14 hours. After the Lievito Madre rolls rise, beat one yolk with 1 tbsp. of milk and coat them gereously with the mixture.

Sprinkle with poppy seeds, granulated sugar and sesame seeds. Bake in a preheated oven at 360°F (180°C) without a fan for about 20 minutes. Cool the baked Lievito Madre Sourdough Rolls on a wire rack.
