"A quick monastery-style soup with mushrooms and rice - for the whole family"

Ingredients

  • onion - 1 onion
  • frozen mushrooms
  • tomatoes - 1 pc.
  • dried porcini mushrooms - 3 pcs.
  • olive oil
  • rice - 2 tbsp.
  • celery (leaves and stem)
  • black pepper
  • salt
  • parsley
  • tarragon
  • carrots - 1 pc.

How to make

To prepare the delicious mushroom soup, finely chop the onion, celery and carrot first. Put them in a large pot of water and boil them.

Season with salt and pour 1/2 cup of olive oil. After 10 minutes, pour 2-3 dried porcini mushrooms, as well as the frozen ones.

Boil the aromatic soup for 10 minutes and add 2 tbsp. of rice and the grated tomato. Season with tarragon. Cook, until the rice is fully cooked.

Serve the monastery-style mushroom soup with rice with a pinch of black pepper, parsley and 1 tsp. of vinegar.
