How to make
In a bowl mix the almond flour, I used grinded almonds, cocoa and baking powder. Separately, with a mixer, beat the eggs with the stevia powder, until it has dissolved.
Mix the liquid and dry ingredients, by stirring with a spatula and pour the resulting batter onto baking paper in a small 9.5″ (24 cm) baking pan. Bake the cake layer in a heated oven at 360°F (180°C) for about 20-25 minute and check it with a toothpick to make sure that it is fully baked.
Take it out and cool it. Cut it into two halves. Prepare the cream for the keto cake by heating liquid cream, add chocolate pieces, remove it from heat and stir, until a smooth mixture is obtained.
Leave it to cool slightly and add the cream cheese or cottage cheese for thickness. Spread the first half, put the second part on top and cover the cocoa cake with cream.
Decorate with slices of kiwi and raisins! Cool it, cut it and eat it!
