How to make
Beat the eggs along with the erythritol and then mix them with the milk, melted butter, grated carrots, walnuts, cinnamon and raisins.
Sift the flour along with the baking powder and add it to the mixture.
Stir the sponge cake mixture and pour it into a pre-greased round baking pan.
Put it in the oven for about 20 minutes at 350°F (175°C).
Remove the cake layer from the oven and cut it in half.
Place the first cake layer on a tray and spread it with the marmalade and a little whipped coconut cream.
Put the second cake layer on top and spread the whole carrot cake with the rest of the coconut cream.
Decorate it as desired with walnuts and grated carrots.
