How to make
In a bowl, sift the flour with the baking powder and a pinch of salt. Add the sugar.
In another bowl, crack the eggs, pour the oil, add the yogurt, the juice and grated lemon peel.
Homogenize the products well and pour them into the dry mixture, by stirring with a spoon.
Place the paper cups in muffin tins. Fill 2/3 of each cup with the prepared mixture.
Add on top of each muffin thinly sliced peaches.
Bake the muffins at 360°F (180°C) in a preheated oven with a fan, until they aquire a golden brown color.
Take the finished peach muffins out of the oven and while they're still warm, spread apricot jam on them.
