Ingredients

  • zucchini - 2 pcs. (medium - sized)
  • mozzarella - 4.4 oz (125 g)
  • eggs - 1 pc.
  • milk - 3 tbsp.
  • flour
  • breadcrumbs
  • salt
  • black pepper
  • olive oil

How to make

Cut the zucchini into thin strips. Blanch the zucchini in salted boiling water for 3-4 minutes, then remove and place them into a colander and wait for the water to drain.

In a bowl, beat the egg with the milk, a pinch of salt and a pinch of black pepper. Place a small piece of mozzarella on top of each zucchini strip and cover with both ends.

Roll them in flour, dip them in beaten egg and roll them in the breadcrumbs. Line a tray with baking paper.

Arrange the zucchini, drizzle each with a teaspoon olive oil and bake them at 390°F (200°C) in a preheated oven with a fan for about 15 minutes, or until they aquire a nice golden brown color.

Serve the breaded zucchini warm. These Oven-Baked Breaded Zucchini with Mozzarella are very crispy and tasty.
