How to make
Peel the artichokes from the outer thick leaves until you reach the more tender ones.
Cut them it in half. Remove the moss at the base of the vegetables with a knife. In fact, artichoke is a flower, not a vegetable! :)
Cut the halves into small slices and soak them for 30 minutes in cold water with the juice of one lemon.
Heat 1 cup of olive oil in a pan. Add the peeled garlic cloves and finely chopped parsley.
Leave some for sprinkling, before serving.
Add the chopped artichoke into the baking pan, pour the white wine and 1 cup of water over it. Cover the dish and stew it until the artichokes soften.
Pour 2-3 tbsp. of olive oil in a pan. Arrange the stewed slices of artichoke and cover them with pieces of mozzarella.
Bake the vegetables in the oven until they aquire a nice brown color at 390°F (200°C) in a preheated oven.
Before serving, sprinkle the oven-baked artichokes with mozzarella with finely chopped parsley!
