How to make
Peel and grate the apples on a coarser grater. Drizzle them with the juice of one lemon, 1 teaspoon of cinnamon and 1 tablespoon of brown sugar. Mix well and leave them for 30 minutes to flavor.
Line the large oven tray with a piece of baking paper. Pour the melted butter and put the tray in a cool place, so that the butter can set. Squeeze the apples from the juice and spread them out on the butter.
Crack the eggs into a bowl. Add the sugar and beat with a mixer, until a fluffy mixture is obtained. Sift the flour with a pinch of salt. DO NOT add a leavening agent!
Add it in portions to the egg mixture, by stirring with a spoon, until a homogeneous mixture is obtained. Separate a small bowl from your mixture and color it with a teaspoon of cinnamon. Pour the remaining mixture over the apples.
Level it out and add the colored mixture on top with a spoon. Use the tip of the knife to spread the cinnamon mixture, in order to form patterns.
Bake the roll at 390°F (200°C) in a preheated oven for about 5-8 minutes.
Sprinkle a few tablespoons of brown sugar on a cloth.
Turn the sponge cake layer over immediately after removing it.
Roll it along with the cloth into an apple cake roll.
Leave it to cool completely before slicing the apple cinnamon roll!
