Ingredients

  • spelt flour - 9 oz (250 g)
  • wheat bran - 0.5 oz (15 g)
  • flaxseed - 1 tbsp. (crushed in a mortar)
  • bananas - 1 pc. (well ripened)
  • natural sourdough - 80 g (rye or spelt)
  • whey - 2/5 cup (100 ml)
  • brown sugar - 1.4 oz (40 g)
  • eggs - 1 pc. XL
  • oil - 4 - 5 tbsp.
  • salt - 1 pinch

How to make

In a large bowl, mix the flour, bran, a pinch of salt and the ground flaxseed.

Lightly beat the egg, pour the whey, the mashed banana (100 g peeled) and the brown sugar and stir gently, so that it can dissolve.

Pour the liquid mixture into the flour, add the natural sourdough and fat and start mixing with a wooden spoon, until a soft and sticky dough is obtained.

Leave it to rest, covered with a towel, for 1 hour and knead again with the spoon or fork if it's easier for you, as the dough shows some resistance. It can also be kneaded in a food processor, but it would be difficult by hand.

Repeat this procedure once more, by once again leaving it for an hour and then kneading.

Using the spoon or spatula, transfer the batter for our sweet bread into a rectangular standard cake tin. Cover it with a towel and leave it to rise for 7-8 hours, or until it doubles in volume (this depends on the strength of your natural sourdough, if it is new and if this is its first use, it will take longer, but if it has been used many times, the sourdough becomes stronger and rises faster).

Bake in a 390°F (200°C) oven for 15 minutes and then lower the temperature to 350°F (175°C) for a further 30 minutes. If you notice that it has darkened a lot on top, cover it with aluminum foil at the end.

Leave the baked healthy banana bread to cool on a wire rack before slicing it.

Perfect for a morning or afternoon snack - toasted, buttered, sweet or plain, sprinkled with powdered sugar (optional).

You will be enchanted by the taste and aroma of this banana cake - the banana can be sensed perfectly, it's not intrusive and the taste is fresh and balanced.

To make it easier for you, knead it the day before, so that it rises overnight and in the morning you will have a healthy and delicious breakfast.

There are banana bread recipes with baking soda as a leavening agent, but the result is more of a sponge cake and what I presented to you is a real and authentic sweet bread.

In addition to spelt, bran and flaxseed, the natural sourdough makes it even healthier.
