How to make
Peel and cut the potatoes into pieces.
From the leeks, cut only the white part into circles.
Melt the butter in a pot, add the leeks and the onion and fry briefly.
Add the sliced potatoes and cover the vegetables with the vegetable broth.
You can also use chicken broth. Boil, until the potatoes are fully cooked.
Purée the vegetable soup, until it becomes smooth.
Dilute the potato and leek cream soup with the cooking cream to the desired thickness. Season with a pinch of black pepper.
Vichyssoise French Soup with Leeks is served cold with a spoonful of sour cream!
