How to make
Cut the piece of pork loin into two halves lengthwise without separating them. Season with salt and black pepper.
In a mortar, crush a handful of walnuts with 1 tbsp. of anise seed. Sprinkle one half lengthwise.
Arrange the pitted prunes in a row. Sprinkle with the remaining walnut mixture.
Bring the two halves of the meat together and tie them tightly with kitchen twine.
Brush the meat generously with olive oil and sprinkle with paprika.
Preheat the oven to 360°F (180°C). Put the meat in a baking pan with a cup of water and a cup of olive oil. Place the pan in the preheated oven.
Keep an eye on it and when it changes its color, pour in 2/5 cup (100 ml) of white wine.
Bake the pork roll for about an hour and occasionally open the oven to pour the sauce over the meat.
Note: To cook meat well, whatever it is, cook it for as long as it weighs! For example: 1 kilogram of meat - 1 hour of baking!
