Ingredients

  • pork - neck
  • dijon mustard - 3 - 4 tablespoons
  • brandy - 2 tablespoons
  • black pepper - ground, to taste
  • garlic - 1 head
  • salt
  • rosemary - 1/2 tsp
  • savory - 1/2 tsp
  • basil - 1/2 tsp
  • marjoram - 1/2 tsp
  • parsley - 1/2 tsp
  • spearmint - 1/2 tsp
  • oregano - 1/2 tsp
  • lovage - 1/2 tsp
  • chervil - 1/2 tsp

How to make

Spike the pork neck with the halved garlic cloves. Mix the mustard with the brandy and black pepper and smear it well all over the entire neck. Put it in a greased tray, on the bottom of which you have sprinkled plenty of salt.

Sprinkle on the remaining spices, wrap the tray with foil and put the pork to cook for about 4 hours on medium heat in the oven.

Finally, remove the foil and bake to a nice tan on top. Serve the pork neck sliced, garnished with vegetables or rice.
