How to make
The taste of ginger enriches the taste and aroma of the quinces. But not everyone likes the characteristic spicy taste. That's why I always prepare quantities with and without ginger.
The quinces are cut into pieces of about 0.6″ (1.5 cm). The ginger is peeled and cut into smaller pieces.
Make a syrup from the sugar and 2 cups of water.
Add the quinces and ginger and leave them to boil over a moderate heat. Do not stir frequently and vigorously - especially towards the end, so that the piece of fruit do not tear.
When the quince jam thickens, after about 30 minutes, add the citric acid. If you are going to store the quince jam for a long time, you need to sterilize it for a while.
