How to make
Boil the water for the dough along with the salt and butter. Once the butter has melted, pour the flour all at once and stir over low heat with a wooden spoon, until the dough forms into a ball.
When ready, remove it from heat and leave the steamed dough to cool. After the dough has cooled, start adding the eggs one by one, by mixing well after each one, until they're absorbed well by the dough.
Heat the oil. Place the dough in a piping bag with a thin, star shaped tip. Pipe out strips, which are between 4 (10 cm) and 6″ (15 cm) long into the heated oil. Fry, until they aquire a golden color. Roll the hot churros in a mixture of cinnamon and sugar.
Dissolve the starch for the chocolate sauce in 2/5 cup (100 ml) of milk. Boil the rest of the milk with the sugar and vanilla. Add the chopped chocolate and stir, until it has melted.
Add the milk with the starch, by stirring constantly. After 3-4 minutes, the chocolate sauce is ready. Serve the finished churros with the chocolate sauce and a cinnamon stick for decoration.
