"If you havent had red lentil bread before, youre missing out"

Ingredients

  • red lentils - 1 cup
  • yogurt - 6 tbsp.
  • baking powder - 1 tbsp (10 g)
  • salt - by taste
  • fresh parsley - 4 - 5 sprigs
  • oil - 3 tbsp.
  • black pepper - 1 pinch
  • eggs - 2 pcs.
  • corn flour - 2 tbsp.

How to make

A cup of red lentils is poured into a saucepan with 3 cups of hot water and it is left, until it slightly swells up, I left it for 1 night.

Strain it well the next day. It is poured in two portions into a chopper and it is grinded, until a thick mixture is obtained, so that there aren't any whole grains.

Pour it into a bowl, add the eggs, as much salt as you like, chopped parsley, black pepper, oil and the yogurt beaten with the baking powder to activate.

Finally, add the corn flour. Mix with a fork and blend it with a liquidizer into a smooth mixture.

Pour the mixture into a small rectangular cake tin onto baking paper.

Bake the bread in a preheated oven at 360°F (180°C) for about 30-40 minutes, until it is fully baked.

The bread is taken out, wait for it to cool a little and it is sliced.
