How to make
Cut the potatoes and put them in boiling water for a few minutes to blanch.
For the mayonnaise
Cut the avocado in half and peel it. Cut it and put it in a bowl. Flavor with lemon, salt, olive oil, fresh tarragon and puree, until a smooth mixture is obtained.
For the schnitzels
To thin out the chicken fillets, cut them in half. Season them with salt and black pepper. Put them in a bowl and mix them with 1 tbsp. of sour cream, finely chopped anchovies and capers, along the juice of half a lemon.
Heat 100 ml of oil in a pan. Divide the breading ingredients into 3 separate bowls: flour, beaten eggs and breadcrumbs.
Roll the fillets first in the flour, then in the eggs and then in the breadcrumbs. Fry them along with the blanched potatoes, until they aquire a golden brown color.
Serve the schnitzels and potatoes and garnish them with the avocado mayonnaise.
