How to make
Cut the chicken into portions. In a bowl, mix the olive oil with the spices for the chicken, stir. Smear each piece of chicken with this mixture and arrange them in a tray, while putting whole unpeeled garlic cloves between them. Pour in the wine and broth.
Cover the tray with foil and bake at 360°F (180 °C) for 60 min.
Clean the mushrooms and chop them finely, put them in a pan with the butter and 1 tbsp olive oil and braise until golden. Season with salt and black pepper to taste.
Take the chicken out of the oven, remove the foil and arrange the braised mushrooms around the meat. Bake another 10 min. for the meat to gain a nice crisp. When serving, place a piece of meat, mushrooms and a little sauce from the baking in each plate.
Notes: Cremini mushrooms are similar to champignons. They have a yellow-brown to dark brown cap but a harder consistency and fuller taste. They're like not fully mature portobello mushrooms, which is why they call them baby portobellos. You can substitute them with the common champignon though.
