Fry the chicken wings in a deep frying pan with the oil.
Reduce the heat and add the chopped spring onions and season them with as much salt as you like.
After a few minutes, add the thinly sliced carrots and peeled and finely chopped tomatoes, crushed garlic, chopped parsley, black pepper, lemon juice and a little water or chicken broth.
Transfer everything into a clay pot, cover it with its lid and put the chicken stew in the oven.
Bake the summer chicken stew in the oven for about 45 minutes to an hour at a moderate temperature.
