Ingredients

  • filo pastry sheets - 1 package
  • sugar - 1 cup
  • oil - 1 cup
  • cinnamon - 1 tsp.
  • sugar - for sprinkling
  • pumpkin - 1 small

How to make

Wash and peel the pumpkin. Grate it on a coarse grater. Put it in a pot with the sugar and half the oil.

Fry it for about 15 minutes or until it starts to soften slightly. Add the cinnamon a few minutes before turning the heat off. Remove it from the heat and leave it to cool slightly.

Add the remaining oil and stir.

Open up the filo pastry sheets. Grab two sheets, sprinkle with pumpkin and roll them up.

Place them in a baking tray lined with parchment paper. Repeat the procedure, until you run out of products.

Sprinkle the finished rolls with a little oil and sugar.

Preheat the oven to 360°F (180°C) and bake the Vegan Pumpkin Filo Pie, until a golden color is obtained.
