How to make
Oven - 390°F (200°C);
Deep ceramic pot.
The potatoes are cleaned. They are placed in a kitchen robot and grated. Immediately place them in a bowl and rinse them under cold water. Strain them and place them in a cotton cloth, wrap them in a bundle and squeeze them as much as possible.
Place them in a dry bowl, add the cream, nutmeg, salt, black pepper and stir. Set them aside.
Cut the onion into thin slices. Pour them over the potatoes.
The skin is removed from the bacon and is cut into juliennes. Add it on top of the onion.
Grate the cheese on a grater and half of it - about 3.5 oz (100 g), is added to the potato mixture.
Everything is mixed very well - until the products are well mixed.
Grease the baking pot very well with olive oil - the bottom and the walls. Pour the mixture, level it out.
Cover it with aluminum foil - without the foil touching the mixture.
The casserole is baked at 390°F (200°C) for 45 minutes.
After 45 minutes, remove the foil, sprinkle with the remaining cheddar cheese and bake for another 15-20 minutes, until a golden color is obtained.
Before serving, the gratin is cooled for 20 minutes.
