How to make
Dissolve the gelatin according to the instructions on the package.
Put the berries with 1 cup (200 ml) of water on the stove to boil for 15 minutes, then remove them from the heat and add the sweetener and gelatin. Leave the mixture to cool.
Divide the yolks from the whites and beat them into a white mixture.
The yolks and the other tablespoon of sweetener are beaten into a frothy mixture, add the yogurt and butter and beat. Then add the coconut flour, baking powder, lemon peel, husk and beat again.
Finally add the egg whites and mix gently with a spatula.
Pour the mixture for the dietary cake in a mold with a diameter of 6″ (16 cm), which has been lined with baking paper.
Bake in a preheated oven at 360°F (180°C) for 30 minutes or until it is fully baked. Leave it to cool.
Once the keto cake has cooled well, pour the berry jam and sprinkle it with coconut shavings.
