Separate the yolks from the whites of the three eggs.
In a bowl, mix the egg yolks, sweetener, vanilla extract and flour, until they are completely mixed together.
You can mix them with a wire whisk or use a mixer or blender.
Beat the egg whites into a frothy mixture with a pinch of salt. Add the sour cream to them, but from here on, just mix with a stirrer.
Carefully mix the flour mixture into the egg whites.
Pour the coconut muffin mixture into molds.
Bake the sweet keto muffins at 360°F (180°C) for 15-20 minutes.
