How to make
Peel the root vegetables, boil them with a spoonful of olive oil and salt, until they fully soften. The garlic cloves are also boiled with everything else.
Strain the water, without throwing it away, because you will use some of it.
Add the butter, spices and salt to the root vegetables. Puree by adding a little of the boiling broth, until the desired thickness and a fluffy puree is obtained.
Season the vegetable puree with more spices and serve it sprinkled with very little lemongrass. I use coarse salt, which is mixed with black pepper and dried lemongrass. It adds a great finishing touch.
The aromatic healthy puree is great as a garnish for roasted meat or fish.
