Ingredients

  • pork ribs - 2.2 lb (1 kg)
  • onions - 1 onion
  • garlic - 1 head
  • tomatoes - 1 pc.
  • olive oil - 4 tbsp (60 ml)
  • oranges - 1 pc.
  • pineapple juice - 2/3 cup (150 ml)
  • black pepper - by taste
  • thyme - 1 tbsp.
  • rum - 3 tbsp.
  • cumin - 1 tsp.
  • soy sauce - 1 tbsp.
  • salt - by taste
  • For spreading during baking
  • tomato sauce - 8 fl oz (230 ml)
  • honey - 1 tbsp.
  • mustard - 1 tsp. with a tip
  • balsamic vinegar - 1 tbsp.
  • salt - by taste

How to make

Prepare a wide and deep cookware, in which the whole ribs will fit well. Season them with all of the spices - rum, soy sauce and some olive oil. Cover them with foil and refrigerate them for at least 3-4 hours, but the best option is to leave them overnight.

Grease the bottom of a baking pan with olive oil. Cut and distribute the onion and tomatoes slices or crescents in it and place the garlic head whole in the center (wash it well and cut it across the top).

Squeeze the orange juice and pour it along with the pineapple juice over the vegetables. Arrange the ribs on top and drizzle them with a little olive oil.

For the mixture you will spread during baking, mix all of the products in a bowl - tomato sauce, mustard, vinegar, honey (melt it in a water bath, if necessary) and add as much salt as you like. Using a kitchen brush, grease the ribs on all sides and place them in a preheated oven at 340°F (170°C).

Bake them for 1 hour and 30 minutes, but take them out every 25-30 minutes to turn and spread them well with the mixture, until they're fully cooked. If you think, that there is not enough liquid in the baking pan, you can add a little water or more pineapple juice - it will add an irresistible taste to the meat!

Once the dish is cooked, remove all of the softened vegetables and remove the roasted garlic cloves along with a little of the liquid, if any. Blend, until a sauce with a smooth consistency is obtained. It turns out incredibly tasty, but if you don't want the sauce, you can leave the vegetables whole.

Serve the ribs cut into portions and garnished with sauce. If desired, you can add an additional garnish of potatoes.
