How to make
Wash and dry the chicken fillet. Cut the fat or skins at the edges and cut it into thin strips, which are about 4-5 cm long. Roll the juliennes with a little salt, lemon juice, black pepper and paprika.
Finely chop the onion and the peppers into cubes. Fry them in olive oil, until they soften, then add the chicken juliennes and fry them, until they become milky white and aquire a very light color.
Do not overcook them, because white chicken does not need long heat treatment and will become dry.
Serve the dish sprinkled with chopped fresh parsley or coriander.
Eat it with a fresh salad or as a filling for wraps or fajitas.
