How to make
Torrijas can be prepared with bread, Easter bread or brioche. The Spaniards use their sweet breads - Mona and Toña Alicantina. It is consumed as a dessert - incredibly aromatic and delicious.
The first step is to heat up the milk with the sugar, cinnamon and lemon peel. Once it boils, remove it from the heat and leave it to cool - this is done to flavor it.
Separately beat the eggs with the cream and stir them with the milk, from which we have previously removed the cinnamon stick and citrus peel. Pour the mixture into a deep bowl and place the slices in it to soak well and absorb the mixture.
Heat the butter with olive oil over a moderate heat and fry the torrijas on both sides, until they acquire a dark golden color.
Once they're done, place them onto kitchen paper, so that it can absorb the excess fat.
Prepare the syrup, by putting all of the products for it on the heated hob and boil, until it thickens slightly.
If you do not have dessert red wine, you can use ordinary wine and increase the amount of sugar. Once you remove it from the heat, remove the cinnamon and orange peel.
Serve the Torrijas, covered with wine syrup and if desired, decorate with whipped cream and sprinkled with more cinnamon powder.
