Irresistible no-bake tartlets for your holiday or even any occasion.
To prepare these delicious mini tartlets, first grate your carrots on a coarse grater.
Melt the coconut oil as well. You can replace it with butter.
Remove the stones from the dates. If the dates are too dry, first soak them in hot water for 10 minutes, then strain. I used fresh dates, which are soft and do not need to be soaked.
Put all the ingredients for the base except the coconut flour in the bowl of a blender.
Blend briefly. The mixture does not need to be smooth.
Then add the coconut flour and mix.
Prepare a muffin tin and place a paper cup in each slot.
Spread the mixture by pressing with the back of a spoon or the bottom of a small cup. Also form a small boarder.
You should get a kind of nest, which you can later fill with stuffing.
Put the molds in the refrigerator to harden, and in the meantime prepare the filling.
Peel and cut one large apple into small cubes.
Add a spoonful of freshly squeezed lime or lemon juice to the sliced apple to prevent it from darkening. Also add the honey and a few spoons of water and put it on the stove to boil for a few minutes until the water has evaporated and the apples have softened.
Allow the filling to cool and then fill the tarts with it.
Break the chocolate into a bowl and add 3 tablespoons of coconut milk to it.
Place the bowl in a water bath and wait for the chocolate to melt while stirring.
Add a spoonful of the chocolate frosting on top of the tartlets and place them back into the fridge for a few more hours.
