How to make
Preheat the oven to 430°F (220°C).
In a blender, grind the thyme leaves, cumin powder, hot pepper and garlic, add butter and honey and blend the mixture.
Grease the fish well inside and out, cover it with cling film and leave it in the fridge overnight.
Before baking, take out the fish and leave it at room temperature.
Add salt, black pepper and lightly grease it with olive oil.
Bake the fish in the oven in a baking pan lined with baking paper or on the grill for 20 minutes, by only turning the juicy trout once.
Serve the spicy trout with honey and thyme with lemon slices and with a garnish or salad if desired.
